Beaufort, the capital of Beaufortain perched at an altitude of 758 m, is a focal point for inter-communal life and the administrative centre of Beaufortain. With its 2 000 or so inhabitants covering over 14 hectares, the town includes the village of Arêches and is one of the most extensive communes in Savoy. With its paved, floral side streets, colourful facades and stone houses huddled around the Church of St. Maximus and the former Randens Castle, which is currently the headquarters of the town hall, the village remains a traditional and welcoming small mountain market town.
But Beaufort is also the name that the village gave to its famous cheese, which has carried the AOC label since 1968. It is home to Beaufortain Dairy Cooperative, which makes the "Prince of Gruyères", as it was renamed by the illustrious Savoyard gastronome Jean Anthelme Brillat-Savarin, at the end of the 18th century.
